Organic Healthy Recipe Refried Bean & Shiitake Burrito Recipe Recipe by Larry Cook
I’m going to show you how to make a refried bean and shitake mushroom burrito. So let’s get started. First, turn on your pan to high heat and then add some oil. We’re going to use coconut oil, which is excellent for frying and sautéing. And then take your shitake mushroom and cut it into small pieces. Take your jalapeño pepper and cut that up as well. Now add your shitake mushroom and the peppers to the pan. Again, your heat should be either low or medium-low. Stir it into the oil. Add a little bit more oil. Have a little bit of your onionmaybe one-thirdokay, cut up your onion into small pieces and add this to the mixture, too. Stir your food occasionally, making sure that you’re still on low to low-medium heat.
Okay, the next step is to open up the refried beans. We’re using Amy’s organic refried beans with green chilies. It’s a very delicious refried bean. Okay, this is looking pretty goodit’s browned up, and we still need to heat up the refried beans, so we’re going to add half a can of refried beans. Okay, refried beans notoriously do not have enough salt, so go ahead and add some organic shoyu sauce. We’re also going to add some cumin to the mixture. And stir it all together.
Okay, while your beans are cooking on low, go ahead and cut up your tomato. Also prepare your avocadojust slice it down the middle. Okay, we’re going to be using sprouted grain tortillas by Food for Life. These are deliciousvery, very delicious tortillas. Ordinarily, you would heat it up on a separate pan; however, I don’t have a separate pan, so we’re just going to throw it right onto the plate.
So it’s very simple. We’ll add some beans. Okay, we’ve added the beans; let’s add the tomato. Add the avocado. Add some sprouted red lentilsthese are very, very good for you and they’re very tasty as well. And we’ll add some clover sprouts, Barlean’s flax oilit makes a great condiment and it’s also high in omega-3 fatty acids, which we all need. And my favorite dressing, which makes everything taste good: Annie’s Woodstock dressing. And here we have a delicious refried bean shitake mushroom burrito, and you can either eat it open-faced like this, or you can close it up and eat it like a traditional burrito.

Healthy Recipe Overview Heat pan on medium heat. Add coconut oil. Dice organic mushroom and onion. Add both to pan and stir for a few minutes until browned. Stir in organic jalapeño and fry. Add 1/2 can of organic refried beans. Add shoyu sauce. Add cumin. Add a little water if mixture sticks to pan. Cook until hot. Dice tomato. Prepare avocado. Heat tortilla in separate pan. Add mixture to heated tortilla. Add the organic tomato, lentils, avocado and sprouts. Add flax oil and Woodstock dressing. Fold or eat open face.
